Ecuador Food Project

At the beginning of the school year Sara had to choose a country to learn about in different stages throughout the year. She chose Ecuador. That has been super handy since Sean served a mission for our church there and lived there for 2 years. Sean and I were also able to visit Ecuador 3 1/2 years ago as he did some humanitarian prosthetic work there.  This month's topic for her country study was food.  We make Ecuadorian food here often and it's one of Sara's favorite dishes.  For her project, she helped to make the dinner and we took pictures to document.  We made a typical lunch in Ecuador:  Lentils, Rice, and Carne Asada

To color the rice you heat some oil in a pan and put some achiote (annato seeds) in the oil

Once the achiote has released it's color you scoop out the achiote and throw it away, leaving the colored oil behind

Then you saute some onion and garlic and add the dry rice making sure to coat it in the colored oil.  After that you add the water.

Lily wanted in on the action and put on her Ecuadorian dress.  We had brought that dress back for Sara.  It's crazy to think that Lily fits in it now.
